Good croissants are rare because making laminated dough is difficult. It requires patience, expertise, and expensive, top-tier ingredients we refuse to compromise on.

The Founders and Our Unique Delights

 

Albright's Delights was founded by South St. Paul residents Danae and Ryan Albright. The couple, who share a profound passion for baking, started by selling cottage baked goods to their neighbors.

Their breakthrough moment came with the Kouign Amann—a Breton pastry that laminates dough, butter, and sugar. This meticulous rolling and folding produces a treat with many sweet, buttery layers that caramelize on the bottom while remaining soft on the inside. Besides the traditional recipe, they offer variations with fillings like raspberry cream cheese, caramel, or apple ginger pecan.

Using the same rigorous lamination technique, they then introduced traditional and filled Croissants. Danae constantly creates innovative flavors, with customer favorites including blueberry lemon, almond chocolate, and pistachio raspberry.
